Zucchini Cake Recipe

Zucchini Cake Recipe:

I can't wait until this summer to make this delicious alternative to a carrot cake.

2.5 cups sugar
2 cups flour
4 eggs (beaten)
1 cup oil
1 teaspoon cinnamon
1 teaspoon vanilla
2 teaspoons baking soda
2 teaspoons baking powder
1 cup walnuts (optional - can use other nuts)

Preheat oven to 350 degrees.

Mix eggs, oil, sugar, cinnamon, and vanilla in a large mixing bowl. Sift together flour, baking soda, and baking powder. Mix dry ingredients into the first mixture. Add zucchini and nuts and stir.

Pour batter into a greased and floured 9x13 inch pan (other pans may be used for layered cakes, but adjust baking time accordingly). Bake for 30-40 minutes or until a toothpick inserted in the center of the cake comes out clean.

Top with your favorite frosting, I prefer the cream cheese frosting listed below.

1 stick butter or margarine (softened)
1 8 oz package of cream cheese (softened)
1 teaspoon vanilla
3 cups powdered sugar

Beat the butter and cream cheese together. Mix in the vanilla. Mix in powdered sugar until achieving the desired consistency.
