Yogurt Cake Recipe

Yogurt Cake Recipe:


I love this cake you can have it with tea or soak it in syrup for dessert. I got it from my Turkish mother-in-law.

225g Self Raising Flour
1/2 a teaspoon baking powder
175g butter
175g sugar
2 eggs
175g thick creamy yogurt
few drops vanilla essence
2 tbsp desiccated coconut
2 tbsp sultanas

To bake

Preheat your oven to 350f/Mark4/180c

Line your baking tin with greaseproof paper, grease and dust it with flour and sugar.

Sift the flour and baking powder into a bowl.

Melt the butter and leave to cool. In a large bowl, cream the eggs and the sugar together and beat until light and fluffy. In a seperate bowl, beat the melted butter into the yogurt and then add to the creamed eggs and sugar. Stir in the vanilla essence, coconut and sultanas and fold in the flour.

Transfer the mixture into your baking tin and bake in the oven for about 1 hour or until golden brown and firm to touch. Once baked leave to cool on a wire rack.

Serve with tea or syrup as a dessert. You can add a little rose water to the syrup and heat up before pouring over a slice of the cake for a warm dessert.
