Yellow Cake Every Friday
When I was growing up in the 1960s, my mother would make a yellow cake with chocolate icing every Friday. It was, and still is, my favorite cake.
For years that simple treat would be made for all the birthdays in our family. The best yellow cake mix probably comes from Duncan Hines and is still avalable at a low price in any grocery store.
My mother would save the bowl and the beaters she used to make the chocolate icing. My sister and I would fight over them. Since I liked sweets more than she did, I usually came away with the bowl, whch often had a good bit of leftover icing. She would usually have to be content to get what was left on the beaters.
A simple yellow cake covered with chocolate icing still does the trick for me!
