Why I Love Fruitcakes

First of all I absolutely love fruitcakes. I grew up in New York City, but I was constantly exposed to fruitcakes because most of my family came from the Carolinas and had grew up eating them.

I will admit that I was a little apprehensive at first as a kid. My grandmother would bake a fruitcake, and might have it for up to two years (yes years) before we would eat them. Rum is an incredible preservative. She kept them tightly wrapped up in foil. Oddly enough, she stored them in the linen closet in those tins that are used for Danish Cookies.

They were always great, and are still one of my favorite desserts.
