Whole Wheat Walnut Streusel Cake
This one is a hit at church socials. The recipe makes two cakes (not two stackable layers). So make one and give one as a gift or halve the recipe if you wish.
1 cup chopped walnuts
1/3 cup firmly packed brown sugar
1 teaspoon cinnamon
2 cups whole wheat flour
1 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/3 cup melted butter
3/4 cup powdered sugar
1 to 2 tablespoons water
Heat oven to 350. Grease and flour two 8 or 9 inch raund cake pans. Mix streusel ingredients in a small bowl; set aside.
Lightly spoon flour into measuring cup; level off. In a large bowl, combine cake ingredients. Beat at low speed until moistened then beat 2 minutes at medium speed. Spread a small amount of the batter in each pan; sprinkle with 1/2 of streusel mixture. Spread remaining cake batter over top and sprinkle with remaining streusel.
Bake at 350 for 20 minutes or until toothpick inserted in center comes out clean. Cool slightly.
To make glaze: In a small bowl, mix powdered sugar and enough water for drizzling consistency; blend until smooth. Drizzle over warm cakes.
