White Mountain Caribbean Birthday Cake
This special "white mountain caribbean" birthday cake is a pure delight. And really, it's not complicated to do. Simply use a sponge to decorate the cake with pastry cream and coconut milk, and then decorate the top and sides with dried coconut.
In our familly, we like to decorate it with various fruits (kiwi, cherries, mangoes etc.) and eat it cold. The cake is at its best when made the day before.
The ingredients are the following:
Cake:
- 6 eggs
- 200 g sugar
- 150 g flour
- a pinch of salt
- zest of one lime (optional)
- 1 / 2 teaspoon cinnamon
- 1 bag of dried coconut (for garnish)
Cream:
- ¼ liter coconut milk
- ¼ pint of milk
- 4 egg yolks
- 1 teaspoon vanilla
- zest of one lime
- 100 g of sugar and a sachet of vanilla sugar
- 50 g flour
- 2 tablespoons rum
