Vegan Chocolate And Zucchini Cake

This is by far the best birthday cake I have ever made for my child. It's healthy (with zucchini in it) AND tastes delicious! It's vegan, but you would never know it's vegan. My six year old, who usually hates vegetables, absolutely devoured it, as did his ten year old brother.

You need a nine inch cake pan, nothing special. It's a lot of fun to realize what you substitute the eggs and butter for in vegan baking. Applesauce and bananas work great! I was inspired to make this cake because it's so healthy with applesauce, bananas, and zucchini, yet it still tastes great.
