Tropical Cake

by Courtney
(Collinsville, tx)

My Mom started making this cake for me when I was a kid since I was a big fan of tropical fruits. It's easy to make and can be frosted any way you prefer.

Ingredients:

2 cups sugar
3 eggs
1 1/2 cups oil
3 cups flour
1 tsp baking soda
1 tsp cinnamon
1 tsp salt
2 cups mashed bananas
1 can crushed pineapple, drained
1 cup pecans, chopped
1 tbsp vanilla

Cooking Instructions:

Cream together sugar, eggs and oil. Mix together and add flour, baking soda, cinnamon and salt. Add bananas, pineapple, pecans and vanilla. Pour into a greased and floured bundt pan. Bake in preheated 350* oven for 1 hour and 15 minutes. Allow to cool in pan 15 minutes. Remove from pan & allow to cool. May be frosted with any desired icing or frosting or left unfrosted.
