I was inspired to make this cake for my best friend's birthday. She LOVES Tres Leches, it's so creamy and spongy, and sweet!

It was her 18th birthday, and I wanted to make it as fabulous as possible.

I started off preheating the oven to 350 degrees. Then I separated egg yolks and whites, and kept the whites at room temperature. Using an electric mixer, I mixed the cream, sugar and butter together until pale yellow and fluffy. Then I added egg yolks and beat them until they were fluffy again, at 2-3 minutes on medium/high speed.

In a separate bowl, I combined the flour and baking powder. In a seperate bowl, I mixed the milk and vanilla. Add the flour mixture and the milk mixture to the butter mixture a fourth at a time until all of the mixtures are combined. Beat them until they are smooth after each addition. Beat the egg whites with cream of tartar until soft peaks form and using a large spatula, gently but thoroughly fold it into the flour and butter mixture.

Grease the bottom of a 11.5x17.5 inch sheet pan. Pour in the batter and bake it for about 20 minutes, until light golden brown. Allow it to cool for about 15-20 minutes.

Top it off with pineapple rings and slices of peach.

For Milks: Don't refrigerate canned milks before using!
