Thompson Family Pumpkin Cake

This makes a great pumpkin cake:


4 eggs
2 cups sugar
1 cup vegetable oil
2 cups flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
2 cups pumpkin
1 tsp vanilla extract
1 cup chopped pecans(opt)
cream cheese frosting

Mix eggs, sugar, and vegetable oil. Add dry ingredients, then add pumpkin and vanilla until well mixed. Pour into greased 13" x 9" cake pan. Bake at 350* for 35 - 40 minutes or until toothpick inserted comes out clean.

Frost with cream cheese frosting and top with chopped pecans, if desired.
