Four Layer Pumpkin Cake - A great replacement for pumpkin pie. It is semi-homehade because it uses a packaged mix and other ingredients that are easily obtainable.
It uses a yellow cake batter along with pumpkin and pumpkin pie spices added as well as a cream cheese or a whipped topping frosting.
Using 2 9" rounds, each cake layer is baked in a 350 degree oven for 28-30 minutes. After the are cooled, the layers are cut into two lengthwise and then each layer is iced with the cream cheese filling with a good sprinkling of pecans on each layer. Easy to prepare and not as time consuming as making a pie from scratch, this cake will be a winner at your Thanksgiving table.
Orange-Cranberry Upside-Down Cake - It takes the humble cranberry to a whole new level. Don't bore them with cranberry sauce again this year! Serve this cake to then instead. It is like the pineapple upside down cake, but with cranberries and oranges taking the place of the pineapple.
A yellow cake batter, preferably from scratch, is baked over a layer of the fruit that is combined with brown sugar and butter (375 degrees for 35-40 minutes).
This cake should have fresh whole cranberries that are to be halved, but that can be time consuming during the preparation of the ingredients. Go for it if you have the time because you can taste the difference.
