Texas Applesauce Cake
Texas Applesauce Cake recipe:
2 1/2 c. flour
1 1/2 c. sweetened applesauce
1 1/4 c. sugar
1/2 c. water
1 1/2 tsp. baking soda
1 1/2 tsp. pumpkin pie spice
1 tsp. salt
3/4 tsp. baking powder
2 large eggs
Beat all ingredients in a big bowl with an electric mixer on low speed for 30 seconds. Beat on high speed for 3 minutes; pour into pan. Bake 45 to 50 minutes; cool in pan on wire rack. Frost.
Frosting recipe:
18-oz. package cream cheese
1/4 c. butter
2 to 3 tsp. milk
1 tsp. vanilla
1 1/2 c. powdered sugar
Beat cream cheese, butter, milk and vanilla in a medium-sized bowl with an electric mixer on low speed until smooth. Gradually beat in powdered sugar on low speed until smooth and spreadable. The amount of sugar can be adjusted to taste.
The story behind this cake:
My family had been given a large amount of canned applesauce, and we had no idea what to do with it. Well, my sister looked through all her recipe books and found this recipe. She gave it to me, I tweaked it a little, and it was a big hit. Over the next couple years I used up all the applesauce, and my family still asks for me to make this cake!
