Simple Birthday Cake

I have made this simple cake two years in a row, for my daughter's second and third birthdays. I am one of the few "old fashioned" people left in the USA who think it's best for a child to enjoy a quiet Birthday with family. We did not have a big screaming party, and as you can see, I didn't hire anyone to make a fancy cake.

My daughter truly enjoyed her birthday, and we all truly enjoyed the cake.

I made a chocolate cake from Betty Crocker, but I added vanilla essence and honey to the mix which I think gives it a nice taste. I actually made it into a layer cake by cooking two 8" cakes and then stacking them on top of the other with frosting in between. I used Vanilla Icing and those old fashioned candy letters for the message. The cake was moist and delicious and there were no complaints. I'll probably do the same thing next year.
