Scottish Chocolate Cake Recipe
This cake was passed down through a childhood friend's family, and became one of our family's favorites. The hint of cinnamon along with the rich chocolate, makes it a unique dessert to take to office parties, church pot luck, or just to delight your own, as I was delighted to receive it as a child.
Preheat oven to 350
Grease a 13x9 pan
Mix in bowl:
2 cups sugar
2 cups flour
Place in sauce pan:
1 stick butter
1/2 cup Crisco
4 tablespoons cocoa
1 cup hot water
Bring to boil, remove from heat
Add flour and sugar mixture, stir well
Add 1/2 cup Buttermilk with 1 teaspoon soda disolved in it
Add:
2 eggs
1 teaspoon vanilla
1 teaspoon cinnamon
Bake for 30 minutes in the greased 13x9 pan at 350
When cake is almost finished make icing by:
In a saucepan add:
1 stick butter
6 tablespoons milk
4 tablespoons cocoa
Bring these ingredients to rapid boil. Remove from heat.
Add:
1 box powdered sugar
1 cup pecans
1 cup coconut (optional)
Mix well and pour over hot cake.
