Rhubarb Cake

My mom would make this throughout the year...she would pick fresh rhubarb and make it...or freeze the rhubarb for making the cake another time such as in the winter. She always made one for my grandpa's birthday. She would also alternate the rhubarb with apples.


Rhubarb Cake

1 cup margarine 1 tsp salt
1 cup sugar 1 tsp baking powder
1/2 cup brown sugar 1 tsp cinnamon
2 eggs 2 cups flour
1 cup buttermilk 1 tsp vanilla
1 tsp soda 2 cups chopped rhubarb

Cream butter. Add eggs, sugar, and milk.
Mix well. Add dry ingrdients and blend well.
Sprinkle rhubarb with 2 tbsp. flour, and add to batter and mix well. Pour into a 9x 13 greased and floured
pan.

Topping
1/2 cup sugar
1 tbsp cinnamon
1/4 cup brown sugar

Mix and sprinkle over batter before baking.
Bake at 350 degrees for 50 minutes or until a tooth pick comes out clean.
