Prehistoric Dinosaur Island Cake

Every year I make one of my best friend's cake for her birthday. One of her favorite things is a type of British cookie called "jaffa cakes," that are a vanilla like cookie, filled with orange filling, and covered in chocolate.

So I made the cake orange flavored, using orange zest, marmalade, and orange juice. And the frosting is a thick almost fudge like chocolate frosting.

I used a flat sheet pan, since she adores dinosaurs, so that I would have room to create a sort of diorama.

The top of the cake was then decorated with an assortment of toy dinosaurs from the dollar bin at Target.
