Pot Of Gold Cake

My son's birthday falls on St. Patty's Day. He thinks of himself as a bit of a leprechaun. We aren't Irish, but the fact that his birthday falls on March 17 is reason enough for us to celebrate.

Each year, I try to bake a cake in keeping with the St. Patty's Day theme. This year I decided to create a pot o' gold cake with a rainbow. I made the pot using a flowerpot cake mold I purchased from Sur La Table. I used extra icing to create a rounded finish.

The cake was a chocolate stout cake. I used buttercream frosting to top the cake and placed gold-foiled chocolate coins and rolos to adorn the top. It was a big hit!
