Pineapple Upside Down Cake
Pineapple Upside Down Cake
Batter:
1 1/3 cup flour
1/3cup. sugar
2 tsp baking powder
2/3 cup skim milk
1 tbsp water
1/4 cup butter, softened
1 egg
1 tsp vanilla
Glaze:
2 tbsp butter
1/3 cup brown sugar
1 can pineapple slices, drained
Preheat the oven to 375. In a glass bowl, combine flour, sugar, and baking powder. Stir in milk, butter, egg and vanilla. Beat with an electric mixer on low speed until well mixed. Then beat on medium speed for about one minute. Place aside.
Spread the margarine over a round baking pan and melt. Stir in sugar and 1 tbsp water. Arrange pineapple slices in the pan. Pour cake batter into the pan. Bake at 375 for 30 minutes or until an inserted toothpick comes out clean. Cool for 5 minutes and flip onto a plate.
