Pig Pickin Cake Recipe

Pig Pickin Cake Recipe:

1 box Yellow cake mix
(will require water, oil, and eggs usually and amounts vary depending on brand of cake mix)
1 small can mandarin oranges
1 16oz can crushed pineapple
1 16oz tub of Cool Whip

Drain juice from mandarin oranges into a bowl and set aside.

Prepare cake batter to box directions, then beat in the oranges until they are in little bits.

Bake 2 layers according to box directions.

Remove layers from pans and allow to cool.

Place bottom layer on your cake plate and then brush or drizzle some of the juice from the mandarin oranges on top.

Open crushed pineapple and drain juice, no need to save this.

Mix pineapple and Cool Whip in a bowl, this is your frosting.

Apply frosting to top of bottom layer and then place the other layer on top of that.

Use remaining mandarin orange juice on top of cake, then frost with remaining frosting.

Great light and summery tasting cake that my grandma used to make for me, hope you enjoy it!
