Pear Cake

2 cups ripe pears, cored, peeled, and chopped fine
2 cups sugar
1 cup chopped nuts (preferably pecans or walnuts)
3 cups flour
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
2 teaspoons baking soda
1 cup vegetable oil
2 eggs, well beaten
1 teaspoon vanilla extract

Preheat your oven to 350 degrees. Then mix the chopped pears with the sugar and add the nuts. Stir this mixture well and it will make its own juice. Set it aside for one hour.

The next step is to add the dry ingredients to the pear mixture.

Then, add the oil, vanilla and eggs. Stir it by hand; do not use an electric mixer.

Pour it into a greased, floured tube pan (bundt cake pan) and bake for 1 hour and 15 minutes.
