Peanut Butter Sheet Cake Recipe

Watch this peanut butter sheet cake disappear before your eyes! It's great for a large crowd, but so good that you can serve it at a small gathering with minimum leftovers!


Mix and set aside:
2 cups flour
2 cups sugar

Bring to a boil:
1 cup water
3/4 cup margarine
3/4 cup peanut butter
1/4 teaspoon salt

1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla
2 eggs, slightly beaten

Bring peanut butter mixture to boil. Pour over sugar and flour. Add remaining ingredients; mix well and bake in greased sheet cake pan or 2 (9x13 inch) pans. Bake at 400 for 20 minutes.

Frosting: bring to a boil 1/2 cup margarine, 6 tablespoons milk and 3/4 cup peanut butter. Remove from heat and add 1 pound powdered shugar and 1 teaspoon vanilla. Spread onto warm cake.

(If you don't have buttermilk, pour about 1 tablespoon vinegar into measuring cup and fill with milk to 1/2 cup mark). Allow to sit for a few minutes.
