Pastor Gant's Birthday Cake 2009

This cake I wanted to make for my Pastor, to try to show him how special he and his family is to us, everyone in our church and to all who know him. I wanted it to be special, but also simple. Our Pastor is not one who likes real fancy or elegant things. He's more a old fashion, and to the point type of person.

So I decided to make a open Bible with a wooden (fondant) cross, and his verse on it. Luke 10:2, which is where he the name of our church, which he founded 26 years ago, and still Pastors it!

Well the cake I tried to make as healthy, and low fat...as a cake can be. I substituted applesauce for eggs, low fat cream and marshmallows for sugar in the icing. The cheesecake filling I used orange juice and mini marshmallows and no sugar.

I thought the cake did turn out ok..... even though I spent 2 days doing the "final touches."
