Orange Glazed Gingerbread Cake

My boyfriend's mother gave me this Orange Glazed Gingerbread Cake recipe the last time we visited. It's super delicious for those who like fruity flavors in their desserts!

2 1/3 cups all-purpose flour
1/4 cup sugar
1 cup molasses
3/4 cup hot water
1/2 cup Crisco all-vegetable shortening
1 egg
1 teaspoon baking soda
1 teaspooon ground ginger
1 teaspoon ground cinnamon
3/4 teaspoon salt
1 jar (18 ounces) Smucker's Orange Marmalade, divided
Whipped cream or vanilla ice cream (optional)

Combine all ingredients (only 1/2 cup of orange marmalade for now) into a bowl and mix until well combined. Pour batter into a greased 9-inch square pan. Bake at 325 degrees for 50 to 55 minutes. Remove from oven and top immediately with remaining orange marmalade. Cool slightly in pan on wire rack. Serve warm with whipped cream or ice cream, if desired.

Makes 12 servings.
