Nutmeg Cake Recipe

1 cup all-purpose flour
1 tsp ground nutmeg
1/2 tsp baking soda
1/2 tsp baking powder
1/8 tsp salt
2 tblsp softened butter or margarine
2 tblsp softened shortening
3/4 cup sugar
1/4 tsp vanilla extract
1 egg, beaten
1/2 cup buttermilk or soured milk* powdered sugar for topping (optional) *To make soured milk, put 1 1/2 tsp vinegar or lemon juice in measuring cup, then add milk to reach the final amount. Allow to sit for 5 minutes before use.

Preheat oven to 350 degrees (325 degrees if using a glass pan). Grease an 8 X 8-inch baking pan. In a medium-sized bowl, sift together the flour, nutmeg, baking soda, baking powder and salt. Set aside.

In a larger mixing bowl, cream together the butter/margarine and shortening. Add sugar to the creamed mixture gradually, beating in until the mixture is light and fluffy. Mix the eggs and vanilla extract into the creamed mixture. Add the dry ingredients to the creamed mixture a little at a time, alternately adding the milk. Beat well after each addition.

Pour into the prepared pan. Bake 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. If you wish, sift powdered sugar on top before serving. Makes 9 servings.
