Non-Dairy Birthday Cake For A Friend

A friend needed a non-dairy birthday cake and there are no bakeries in the area that were willing to make one. Since I bake all the time she called me to ask if I would be willing to make the cake for her. The cake was not for a child, but for an adult at her job.

The cake was prepared with all non-dairy ingredients, such as Egg Beaters, Margarine (non-dairy), Silk (lactose free milk substitute), etc.

I followed the regular recipe for a yellow cake, except I used the non-dairy ingredients. In preparing the icing I also used non-dairy ingredients.
