Moist, Delicious Carrot Cake

Perfect for Easter! My mother makes this carrot cake for us quite often, usually for a birthday or holiday. It is, by far, absolutely one of my family's favorites.

2 cups sugar
2 cups flour
2 tsp. baking soda
2 1/2 tsp. cinnamon
1 1/2 cup vegetable oil
4 eggs 3 cups
shredded carrots

Mix all above ingredients thoroughly. Pour in a greased 13x9x2 cake pan or (2) 8-inch or (2) 9-inch round cake pans. Bake in a 325-degree oven for approximately 35 minutes. Test with a toothpick for doneness.

Cream Cheese Frosting Ingredients:
1 package 8 ounce regular cream cheese (softened)
2/3 cup butter or margarine (softened)
1 box confectioners sugar
2 tsp. vanilla extract

Blend above ingredients until completely smooth.

Frost with cream cheese frosting when cake is completely cooled.
