Meringue Baskets Wedding Cake

My best friend was visibly worried about all the wedding arrangements. She asked me to look at the various menus for the reception and I gasped when I saw what was charge for a wedding cake. I promtly told her that it was insane and that I would take care of it.

I decided to bake 200 Meringue baskets and fill them with fresh strawberries and blue berries (in season) topped with fresh cream...Pavlova style. These I stacked in a pyramid and drizzled strawberry liquor over and lightly dusted it with icing sugar. Tucked in a few fresh roses and "voila!"

All of the almost 200 guests enjoyed their wedding cake and not a single piece was left.
