Lindsay's Very Best Yellow Cake

This recipe is the product of many birthday cake recipes in my family. After finding the other family recipes to be not quite what I wanted, I took the best aspects and ingredients from all and began trying combinations. Lots of birthdays later, here it is -- hands down winner in my family.


Name of cake: Lindsay's Very Best Yellow Cake

List of ingredients:

3 sticks unsalted butter at room temperature
2 C sugar
5 extra-large eggs
2 tsp pure vanilla extract
1/2 tsp pure almond extract
3 C cake flour (or 3 C scant all purpose flour)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp kosher salt
1 C whole milk (I've also used 1 C buttermilk as a replacement with excellent results)

Cooking instructions:

Preheat oven to 350
Grease and flour two 9" cake pans or line cupcake tins
Cream butter and sugar in mixer until fluffy (3-5 min)
Add eggs one at a time to mixer
Add extracts
Separately sift together flour, baking powder, baking soda, and salt
Alternate adding flour mixture and milk into mixer -- mix only enough to combine
Divide batter between cake pans and bake on the center rack for 55 minutes -- or time required for tester to come out clean
Remove cakes from pans and allow to cool on wire racks
