Jam Cake

This cake is a Christmas family tradition, passed down on my mother's side of the family. It is so complicated it is only made once a year.

1 1/2 c sugar
2/3 c butter
4 eggs
1/2c sour milk
1/2 c flour
1 1/2 t soda
2t baking powder
1 1/2 t each nutmeg, cinnamon, cloves & allspice
1c raisins
1c nuts (We use pecans)
1c coconut
1c blackberry preserves (or strawberry)

If desired dates and candied fruit may be added to the above ingredients.

Cream butter and sugar: add eggs one at a time. Add jam. Sift all dry ingredients with flour and add alternately with milk. Mix well and add nuts, raisins and coconut. Bake in layers at 350 for 20-25 min.

Filling

7 egg yolks
1 1/2 c sugar
1 c butter

Cook in double boiler till thick. Remove from heat and add
1c coconut
1c raisins
1c nuts, broken
1 1/2 t vanilla flavoring

Makes enough to generously spread between layers and on top and sides.
