Homemade Carrot Cake

Years ago my mother took an at-home cake decorating course and had done many important cakes in the past, so when I got married I had her make the wedding cake as part of our gift. My wife and I weren't terribly picky on style so my mom made most of the design decisions. We decided on carrot cake as something that would be different but still well liked.

The cake itself was right out of a box (we tasted samples of real homemade cake vs. boxed and I couldn't stand the homemade even though my wife and mother loved it). The frosting was a homemade cream cheese frosting. The flowers to decorate were all sugar sculptures. I don't remember the exact dimensions but the bottom two layers served our 90 guests and we had the top layer to take home. Many of our guests complimented my mother on the look and taste of it.
