Hard Biscuit Cake Recipe
This recipe was given to me by my blind aunt Cathy Cuthbertson. She was incredible in the kitchen although possibly a little too good because despite having Type 2 diabetes she weighed over 400 lbs. She lived to be 93 so I guess this kind of thing did her no harm in the long run.
1 pound butter
1 pound plain flour
2 tablespoons baking soda
1/2 pound caster sugar
9 eggs (lightly beaten)
2 teaspoons vanilla essence
zest of two lemons
1/2 pint double cream
Preheat oven to gas mark 4.
Beat all ingredients in a food processor for 2 minutes or until well blended.
Lightly butter a 1/2 inch deep baking tray and pour in mixture.
Cook in oven for 1 hour or until golden brown.
