Grandma's Apple Nut Cake

This old country family favorite is as delicious as it is remarkably quick and easy to make!

4 cups coarsely chopped apples
2 cups sugar
1/2 cup vegetable oil
2 eggs
1 tbsp. vanilla
2 cups of flour
2 tsp. baking soda
1 tsp. salt
2 tbsp. cinnamon
1 cup chopped nuts, walnuts are best

Combine apples and sugar and set aside. Beat eggs, oil and vanilla. Set aside. Put flour, soda, cinnamon and salt into a bowl Mix apples and sugar mixture, alternating with eggs and oil mixture. Mix in remaining dry ingredients. Stir in nuts.
Bake at 350 degrees in a 13 x 9 " pan for 1 hour.
Top with icing sugar or whipped cream.
