Fruitcake Made With Jack Daniel's Bourbon
Fruitcake made with Jack Daniel's bourbon contains a half-cup of the famous Tennessee Whiskey.
The ingredients are:
1 cup butter
2 cups brown sugar
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup Jack Daniel's Tennessee Whiskey, plus more for soaking cakes
1/2 cup orange juice
3 cups pecan halves
2 cups chopped dried apricots
2 cups golden raisins
2 cups chopped dates
Preheat the oven to 325 F.
Grease three 8 1/2 x 4 1/2-inch pans and then line the bottoms with wax paper.
Mix the butter and brown sugar until they are light and fluffy. It usually takes around 4 minutes.
Add the eggs and beat well.
In another bowl you sift together the flour, the baking soda and the salt.
Add the flour to the butter mixture alternately with the whiskey and the orange juice. Beat on low speed just until blended.
Next, you add the fruits and nuts and then spoon the batter into the cake pans.
Bake it for about 1 hour and 15 minutes, or until toothpick inserted in center comes out clean.
Cool it in the pans on a wire rack and then remove from the pans.
Wrap each cake in whiskey soaked cheesecloth and then wrap it tightly in plastic wrap and then aluminum foil.
Let is stay in the refrigerator for two weeks before you serve it.
It is best served in thin slices.
