Coconut Layer Cake
My neighbor has given this recipe to me and noe it is the favorite cake of my family.
21/4 cups sugar
1 large coconut grated
8 large egg yolks
11/4 cup flour
Pinch of salt
1 tsp powdered cardomom seeds
Icing sugar to garnish(optional)
1. Heat sugar with a cup of water till it reaches one-thread consistency.Leave it to cool.
2. Grind coconut with hot water and extract one cup thick milk.Sieve pulp out and reserve. add 11/2 cup hot water to take more milk(this will be thinner) again.
3. Preheat oven to 320F(160C) with only upper heater on.Beat the egg yolks and keep aside. Mix the flour with thick coconut milk.Add sugar syrup and mix well. Mix the egg.Add just enough thin coconut milk to make smooth batter(slightly thicker than that for pancakes).Add salt and cardomom.
4.Heat 2 tablespoons ghee over low flame in deep 10-inch flameproof baking tin,pour in 1 cup batter.Cover and cook over low heat till just set.Place tin in oven and bake 20 minutes or till browned on top. Remove from oven,pour over one tablespoon of ghee and heat on low flame again for 2 minutes.Pour in another measure of batter,cook till batter starts to set and bake as before.Repeat entire process till batter is used up.Don't let tin reach more than medium heat so that layers cook evenly.
5.Leave it to cool.Turn out into plate to serve.This looks good on its own,especially when sliced to let its pretty layers show.Using a stencil you can dust icing sugar on the top(that is optional).
