Christmas Fruitcake

It is a recipe for Christmas fruitcake we made for years and gave to family friends instead of giving gifts. This way they got a wonderful dessert.


3 cups flour
2 sticks margarine
1 cup sugar
6 eggs
1tsp vanilla
1 tsp lemon flavoring
1 1/2 lb candied pineapples
1 lb candied cherrys
1/2 candied citron (rasins)optional
4 cups broken pecans
1 small jar apple jelly (about a cup)

Cream margarine and sugar then add eggs and then
add 2 cups of flour. Then add flavoring and jelly to batter (it makes the cake moist).

Using remaing cup of flour pour over fruit and nuts. Stir and then add batter over fruit and mix. Pour into a floured tube pan and bake at 275 for 3 hours.
