Chocolate Cake Recipe

INGREDIENTS:


4 oz. unsweetened baking chocolate
1 cup butter or margarine
1 cup brewed coffee
2 cup sugar
2/3 cup buttermilk
1 teaspoon soda
2 eggs
1/2 teaspoon cinnamon
2 teaspoon vanilla
2 cup flour

PREPARATION:

Preheat oven to 350°. In a large saucepan, combine chocolate, butter, and coffee. Heat until chocolate and butter are melted. Add sugar and continie cookoing until over low heat until sugar is dissolved. Combine buttermilk,soda, eggs, cinnamon and vanilla. Stir into choc. mixture. Stir in flour, blending well. Pour into prepared 9 x 13 pan. Bake 30 minutes or until toothpick inserted in center comes out clean. Frost with Collins choc frosting.
Serves 12

Frosting:

1/2 cup butter, softened
3/4 cup cocoa
3 cup powdered sugar
1 teaspoon vanilla
1/4 cup brewed coffee

Using an electric mixer, cream butter. Add cocoa and blend well. Add powdered sugar and vanilla. Add coffee, a little at a time, until spreading consistency.
