Carrot Cake
Carrot cake is a perennial favorite of young and old alike. The surprising
sweetness of the tiny bits, mixed in with the slightly spicy cake and often
topped with a luscious cream cheese frosting, make this a dessert that almost
everyone loves.

There are a few variations to the standard recipe, but most involve wheat
flour, brown sugar, and sometimes nuts or raisins. Of course, grated carrots are
a must. The batter is spiced with cinnamon, and some bakers include more
adventurous spices like nutmeg and cloves. While cream cheese frosting perfectly
complements the delectable cake, a plain vanilla frosting can really allow your
creation’s delicate spices to shine.
In Medieval Europe, puddings featuring the vegetable were a common dish. Many
food historians believe that they were the predecessors of the mouth-watering
treat we enjoy today. Used at that time as an inexpensive sweetener, today we
enjoy the unique taste that these vegetables bring to our dessert plates.
From humble beginnings as a mashed dessert served in pastry to the elegantly
decorated artistic creations of today, this wonderful goody has evolved into a
staple of American dessert cuisine.
