Carrot Cake With Maple Cream Cheese Icing

My boyfriend's favorite cake is, of course, carrot cake. Though I love to bake, I am very busy, and do not have much time to bake cakes that take a lot of effort (I'm much more of a boxed-cake kind of person). But for this birthday, I went all out.

I used an 8 inch cake pan, and baked two cakes, to make a layer cake. I then mixed my own maple cream cheese icing. I sprinkled this with crushed walnuts. In fact, if you do a search for carrot cake with maple icing, you will find the recipe i used (with a little tweaking to make it a little healthier) on a popular cooking website...

The cake was moist and delicious, and we all loved it. Though perhaps not the healthiest birthday cake ever, it is definitely up there in my best!
