Caramel Apple Cake

Caramel Apple Cake Recipe:


1 3/4c all-purpose flour, 1 1/2c Firmly packed brown sugar, 1 1/2 tsp. cinnamon, 1/2 tsp. Salt, 1/2 tsp baking powder, 1 tsp. vanilla, 1/2 tsp. baking soda, 3/4 c Margarine or butter softened, 3 eggs, 1 1/2 finely chopped peeled apples, 1/2 to 1 c. chopped nuts, 1/2 c. raisins optional.

Heat oven to 350 degress. Grease and flour 13 x 9 inch pan. In a large bowl, combine flour, brown sugar, cinnamon, salt, baking powder, baking soda, vanilla, margarine, and eggs; beat 3 minutes at medium speed. Stir in apples, nuts, and raisins. Pour into greased and floured pan. Bake at 350 degrees for 30 - 40 minutes or until toothpick inserted in center comes out clean. Cool completely.

Frosting
2 c. Powered Sugar, 1/4 tsp cinnamon, 1/4 c. margarine or butter melted, 1/2 tsp. vanilla, 4 to 5 tsp. milk

In a small bowl, blend all frosting ingredients, adding enough milk for desired spreading consistency. Spread over cooled cake.
