Banana Pound Cake Recipe

This is such a simple recipe, and a great way to use bananas that are a little past their prime. My wife bakes this all the time, and it's a winner at block parties, church picnics or any other gathering. And kids love it too, which is always a bonus.

BANANA POUND CAKE:

3 bananas
1 cup shortening
1/2 cup butter (1 stick)
3 cups sugar
5 large eggs
3 tablespoons milk
2 teaspoons vanilla
3 cups flour
1 teaspoon baking powder
1/2 teaspoon salt

Preheat oven to 350. Beat shortening and butter together in a large mixing bowl. Add sugar and beat. Add one egg at a time and beat. Combine bananas, milk and vanilla together in a separate bowl, and then add to mixture and beat. Combine flour, baking powder and salt in a separate bowl, and then add gradually to mixture and beat. Pour into 2 loaf pans sprayed with cooking oil, and bake 55 minutes.
