Angelime Cake

1 box of angel food cake mix, complete (requires only water)

1 can of frozen lime juice concentrate


Prepare angel food cake mix as directed, BUT substitute 1/4 cup of lime juice for 1/4 cup of the water required. Bake for 5-10 minutes less than directed on box, or until tester inserted in cake comes out clean--the lime juice may cause cake to brown too much otherwise.

After removing from oven, leave cake in pan(s) and cool on wire rack(s).

This cake has a very subtle tart flavor, great for a hot summer day! I like to use the remaining lime juice to make two tall glasses of lime-ade!
