This cake originated in the USA in the nineteenth century. 

It is prepared using a special pan with a tube in the center. This tube is necessary, as there is to be a hole in the center of the cake. It has to be inverted while cooling so that the form can be retained. 

Another peculiarity is the leavening method, where egg whites are whipped and folded gently into the other ingredients. 

The key ingredients are egg whites, cream of tartar, vanilla extract, almond extract, fresh lemon juice apart from the flour and sugar.
