Angel Food Cake With Chocolate Icing

Although I usually make my angel food cake with a mix from Duncan Hines, this one was prepared using a Betty Crocker cake mix.

There is too much batter to make it in one pan, so I make a second cake in a mini cake pan with the excess. That way, the main cake is not too high and it cooks fully.

The chocolate icing was quickly thrown together from scratch with confectioners' sugar, cocoa, butter, vanilla, milk and a small amount of salt.

We enjoyed the cake show above on Super Bowl Sunday when Eli Manning and the New York Giants beat the New England Patriots and denied them a shot at immortality. Having grown up in New Orleans, I love both Eli and Peyton Manning!
