Almond And Cranberry Coffee Cake Recipe


1 pkg white or yellow cake mix
1/4 cup all purpose flour
3 eggs
2 cups fresh or frozen cranberries
1 1/4 cups water
1/3 cup vegetable oil
1 tsp. almond extract
1 cup sour cream

Topping:

4 cups thinly sliced apples
1 cup sliced almonds
3/4 cup brown sugar
1 tsp. ground cinnamon

Combine cake mix, egg, sour cream and melted butter. Beat on low speed until soft dough is formed. Spread evenly in pan and bake approx. 15 minutes.

Arrange apple slices over cake base. Combine brown sugar, cinnamon and almonds and spread evenly over apples. Drizzle melted butter on top and bake 30-35 min or until apples are golden and tender. Cool approx. 1/2 hour on wire rack. Serve warm or cool.

Vary fruits for a different taste treat.
