Like many of you, my son is totally into monster trucks (Grave Digger and Big Foot 5 are his favorite). For his birthday, I wanted to do something special so I planned out the design a few weeks ago. This was only my second attempt at using fondant, and first attempt at cake carving but I think it turned out well (he liked it).


I used devil's food cake for the base and a yellow cake for the truck. I use rice crispy treats for the wheels (shaped by cramming the rice crispy treat into coffee cups). Using the rice crispies turned out to be essential because when I carved out the wheel wells, it dramatically weakened the structure of the cake. Thankfully both the fondant and resting the truck onto the tires helped to hold the whole thing together. The hardest part of all of it was coloring the fondant.

As a fellow cake designer, I just wanted to pass some information unto you. I did not like coloring fondant and I still wanted to cover cakes so that they looked clean and pretty. So I started researching and I find modeling chocolate to be a lot tastier and a lot easier when it comes to coloring. The only ingredients you need are Karo corn syrup and chocolate melting wafers. With the chocolate melting wafers, there is a lot more color choice and you could also mix the chocolate colors to get the perfect shade. First you melt the chocolate in a double boiler. Then you measure out how much Karo syrup you need(I use a 10 oz chocolate to 1/4 c corn syrup). You then mix in the Karo syrup with the chocolate in the double boiler. Finally you pour the mixture in a lined bowl, pan, container, etc. so that it can cool down (generally about 2-3 hours if you are making enough to cover a cake.) I hope this helps :)
