Monster Truck Cake

Like many of you, my son is totally into monster trucks (Grave Digger and Big Foot 5 are his favorite). For his birthday, I wanted to do something special so I planned out the design a few weeks ago. This was only my second attempt at using fondant, and first attempt at cake carving but I think it turned out well (he liked it).

I used devil's food cake for the base and a yellow cake for the truck. I use rice crispy treats for the wheels (shaped by cramming the rice crispy treat into coffee cups). Using the rice crispies turned out to be essential because when I carved out the wheel wells, it dramatically weakened the structure of the cake. Thankfully both the fondant and resting the truck onto the tires helped to hold the whole thing together. The hardest part of all of it was coloring the fondant.
