Vegan Birthday Cake

Vegan Birthday Cake

1-1/2 cups flour

3/4 cup sugar
2 tsp baking powder
1/4 tsp salt
3/4 cup soy milk
2 tsp vanilla
1 tbsp ground flax seed
2-3 tbsp boiling water

Preheat oven to 350°F (175°C). Grease a cake pan. In a small heat safe bowl, mix the ground flax seed with the boiling water and let it sit for 10 to 15 minutes before using. It should have the consistency of egg whites(If you don't care if this cake is vegan or not just use 1 egg).In large bowl, mix together flour, sugar, baking powder, and salt. Combine remaining ingredients, and add to flour mixture. Beat for 2 minutes. Bake for 30 minutes, or until a toothpick inserted in center of cake comes out dry.

I made this cake because I needed a vegan cake with the crowd I was feeding (various allergies and beliefs).
