A Great One Layer Carrot Cake

It was my son's first birthday, and I wanted to celebrate with a small family dinner. I decided to make my special carrot cake because all my family members love it. My 4 year old son wanted to help with his little brother's special dinner so I welcomed his little hands helping out.

Almost everything was ready. The guests were to arrive in about 30 minutes. The only thing I had to do was cover the first layer of the cake with the filling and put the second layer on top. As I finished spreading the lower layer, I saw my little boy take the top layer and try to help me out by placing it on top. I just opened my mouth as I saw how the cake crumbled to the ground. I saw his beautiful little face turn red. I took him in my arms and told him not to worry.

My doxies had a great carrot cake treat. The cake looked weird, but it tasted great.
